The recipe for Patacones
You probably know the banana chips, but did you know that in Spain, people don’t make chips, but make cookies from the bananas! And these cookies are called ‘Patacones’. You can buy the plantains you need to make patacones in the Netherlands in the supermarket, at the toko or at the greengrocer’s shop nearby.
Ingredients
- plantains
- Garlic
- salty
- Water
- oil for frying
Preparation
Peel the plantain, rinse it under the tap and cut it into pieces between 3 and 10 cm. The larger you cut the pieces, the bigger the patacones will become. As a side dish or snack I usually choose to cut the pieces no larger than 4cm, but try that yourself. Note that you also have to fry larger pieces longer. In this recipe I will continue with pieces of about 3-4 cm.
Now heat a pan with a generous amount of oil and sprinkle the pieces with some salt and crushed garlic or garlic powder before frying them for the first time. When the pieces turn golden, you can remove them from the oil.
After you remove the pieces from the oil, it is important to crush them almost immediately to a thickness of about 1/2 cm. You can do this, for example, with the bottom of a glass. If you wait too long and the patacones cool, you run the risk of them falling apart if you crush them. Then you put them back in the oil and they are ready after about a minute. Let them drain briefly before serving or pat them dry on kitchen paper. If you can’t figure it out based on these instructions, watch this video in which a Panamanian lady explains it step by step.
