During our travels, our guests and we have gained a lot of culinary inspiration. We also give you a glimpse into Moroccan cuisine. Today we are making a delicious stew.
We have completely fallen in love with the culture of Morocco , its Arabs, Berbers, delicious tajines and divine Hammams. So in love that we would like to share this with you, love goes through the stomach!
In Morocco they love to eat a tagine dish and you too can enjoy a culinary paradise among the market men and women!
Food is much more woven into the culture in Morocco than in the Netherlands. Women usually spend half of the day in the kitchen to enjoy a good meal with the family in the evenings and for a long dinner. It is often not complicated what they make, it just takes a long time before it is ready. When visiting people’s homes , try to come to the table to taste the real Moroccan food. Your interest in their culture is certainly appreciated. You will see that it is not very difficult or sophisticated, but it always produces a stunningly delicious result. Let yourself be enchanted, Morocco is beautiful, the people are wonderful and the Moroccan food is delicious!

Enjoy your meal – Bismillah
Ingredients
- 1 kg Beef or lamb (stew with bone, if necessary),
- 1 tsp Ras el Hanut
- 1 tsp Salt
- 2.5 tsp Cumin, ground,
- 0.5 tsp Curcuma,
- 0.5 tsp Ginger powder
- 0.15 gr Saffron
- 7 cloves Garlic, sliced
- 1 Lemon, preserved / candied, In wedges
- 100 ml Oil, neutral
- 200ml water
Preparation
Mix the meat with all the dry spices and put in the “stew”. Add the preserved lemon wedges & garlic and pour over the oil and water. Mix well. Close the jar with baking paper (if necessary, tie it with kitchen twine) or put a tight-fitting lid on it. Let the meat cook very gently for at least 3 hours (preferably just not boiling) over low heat or in the hot coals of the Hammam. Delicious with cous-cous, bread and harissa.
